Deep in the rainforest of the Cordillera roams a cat that forages for sweet fruits like coffee cherries . This is the civet. It is color blind and merely trusts its nose to smell ripe coffee fruits or berries as they are called.
The cats find these ripe fruits and eat them only at night, of course. The civets are nocturnal beings.
The fruits undergo natural fermentation in the feline’s gut and after passing it, these exotic clumps of flavor are then gathered by farmers. They are washed , dehulled and then batch roasted to bring out their natural sweet flavor notes.
